I'm building an extension, and I need to trim some rafters that come down to a wallplate at head height, as there's a door going in.

If I double up the rafters either side, do I need to double up the whole length to the ridge? Or can I stop at a purlin above where I'll cut the rafters?

That's right - you don't have to go the full length and can stop at the purlin.
