a query about flashing where the gable end meets a flat wall, ie. stepped flashing.

there is a video here

showing how to sut the steps to go into the bricks, but it says nothing about soakers. maybe they are there but not visible.

on the other hand, some house round here seem to have no soaker, but the stepped flashing simply bends at 90 degrees to cover the roof tiles.

when do you use this one-piece type and when do you use soakers as well?

Profiled tiles do not require soakers because their profile prevents water ingress provided the lead covers adequately.

Flat plain tiles (mainly) and even some concrete interlocking tiles require soakers with a cover flashing
 
Soakers are visible in the movie i can see them plainly.
there is plenty of info on the net which will tell you how and
where to fit them.. common sense really. try Calders site
