I have recently installed a new kitchen and it has strip lights for under the wall units, these run from the mains and have a cable with a small two prong plug going into the unit on a wire to a standard plug 240v, what i want to do is connect them up to a light switch but don't know if it can be done, can anyone help???

Yes you can ken...
You have two options....
1.If the cable that came with your lights are suitable for carrying 6amps or over then you can just cut the plug and either junction box the cable to your lighting system (wired in the various manors).
2. If the cable is only rated to less than 6 amps or its easier to get to a plug socket you could chase in a switched FCU* and spur it from your kitchen ring ,then wire the lights to the switched FCU* (with the correct rating of fuse according to the lighting instructions).

*you will be using the switch on the FCU as your on/off for the under cupboard lights.

EDITED...Remember electrical work in a kitchen is notifiable work.
