What's the best way to remove hard brown varnish (see picture) from a wooden ceiling beam? I don't want to pay for sandblasting, and sanding would be very hard work and affect the nice sawn surface.

Best bet to keep the sawn finish is to use a good gel or paste stripper (not an easy task now that everyone has gone green), allow to soak for specified times, and use wire wool to remove the excess. Excessive scraping when removing the stripper will damage the finish, whereas wire wool won't. Be prepared to do it a few times.

just be careful with the wire wool, it could cause staining to some woods

That is true, and if you are planning on using a different water based product after stripping, it could also cause rust staining from any steel fibres left behind. You could always substitute the wire wool for the nylon sanding pads, but I'm not sure they would be quite as effective.
