If inserting 100 mm M10 coach screws (pictured below) through a timber support and into a brick wall, I'll require some wall plugs to anchor these in the brick.

What diameter of wall plug would I need? Is it a 10 mm diameter wall plug such as the one linked-to below; or do I require a wall plug with a diameter greater than 10mm? Thanks.

Give 12 mm plugs a try, and drill a 10.5 mm clearance hole in the timber. You can consider a counterbored hole in the timber if the coach screw is on the short side.
John :)

If you're fixing timber to the wall you might not want to use timber screws but instead brick/concrete/block fixings as that's where the fixing will be secured. There's a variety of different fixings to consider.

Coach screws are more for joining something to timber or timber to timber.

Concrete bolts or concrete screws directly into the masonry, works very well

Hardly ever use wall plugs these days, except for yellow or red ones (y)

Fischer S14 plugs are what I use for M10 coach screws. Extremely strong.
