Batten with 2x1 roofing batten and board with insulated plasterboards, less thermal bridges compared to insulating between and seeing as your only adding minimalninaulation, you want it to count.     any pics of outside? Is that a door, is the frame sealed to the building well. You need to stop the water coming in and then with help of a dehumidifier let it dry. Hacking off may speed the process up a bit.

    Bonding behind wiles on a wall at the head of a bath with a shower on is a recipe for disaster, aquapanel will be by far the cheapest and best option if you only need to do the job once.
