OK, here's a picture I found of some cables covered in sheathing / capping. And no one knows what I'm talking about? BTW, I call the outer covering of twin and earth "insulation", it is after all double insulated cable.

I hate 12v lighting, I swopped all mine out to 240v after buying three trannys in a year. There is a lot of rubbish cheap kit out there. Swop it all out to 240v, it will still be happily working in 10 years by which time you would have bought another three trannys. CW.

I use plastic and steel adaptable boxes of various sizes, and DIN rail, it's NOT that expensive if you want to dress it all in and do a nice job. CW.

Pretty soon you won't be able to buy traditional lamps anymore, so I wouldn't worry about it. Stick with a flex long enough to keep you from hitting your head on it, and I wouldn't use a lamp bigger than 60 watts. CW.
