Thanks, I'll go ahead and add more. I think the old stuff has either collapsed over time or just wasn't very thick to start with. The insulation on the left of the photo fills the cavity so I'll aim to do the same all over.

Thank you all, I think you're right - I can't check for certain (I'm not dismantling my kitchen on a curiosity!) but it makes sense because our boiler was fitted at a later date. So more than likely it's the original pipe feeding the gas hob and the old gas oven which has now been removed.

Sorry, I forgot to mention that I keep my car in there. That would be the main source of moisture in the garage. I wipe the car down if it's wet but there will always be some moisture that remains.
