It seems the unit has decided to fix itself! Well, at absolute maximum cooling (& it's fairly full), I'm getting 4°C, so I'm leaving well alone for now, whilst keeping an eye on temp's.

Everything point to thermostat, I'm just surprised it's semi-working. Generally you'd expect a thermostat to either work or go open circuit switching off cooling entirely. Guess locating my multi-meter is the answer. Less typing, more doing, perhaps ;)
I don't think there is one! Despite being relatively new, it's very basic, no frost free. No fan/s I can see or hear, no ducts or even drain holes I can see in the fridge compartment (I've removed the salad doobrie to double check)

You're both soooo much more knowledgeable than me. In my very limited experience, I've used self cutting taps about six times, never had an issue; but certainly I see that six previous successes don't guarantee a seventh and don't plan to use one this time!

As the title suggests, this units' fridge section just doesn't seem to get cold enough. Even on maximum cooling it's 8.5 C. It's only a couple of years old and the freezers is cooling to the correct temperature, so I assume it must simply be the thermostat has lost some of its' gas?

So I need a short piece of copper pipe between the copper outlet and the item in the 4th pic? (which is a pain as I can think of a way buying 50cm of pipe (time for skip diving, perhaps!)
I live in a flat with a tiny kitchen too small to install a washing machine, and no doubt has never had one. I plan to install it just outside the kitchen, pipes that came with it seem just long enough, although in-time I might get slightly longer ones to make routing easier.
