    Its likely that whatever they are laid on has dipped\broken and sank, leaving some tiles with not a lot under them. the cause of that could be any number of things and your not likely to be able to guess at it i'm afraid

    Unless the floor has been re-screeded in its lifetime then its very unlikely to have a DPM. it would be under the concrete - if you find any ;-)

    if they are frostproof then you need to do exactly nothing to look after them, but you do need to ensure they are laid properly, external laying needs a different technique - solid bed fixing is needed as this stops water pooling in the gaps left by a normal trowel, these freeze in the winter...

    you are worrying too much. depending on the brand you can prime with SBR to make them fully waterproof, but its often not needed.

    you cant really reliably seal tiling. using a cement based backerboard would be the best choice, or tank the surface prior to sealing (this is a membrane that can be painted on or used as a sheet) accoustic board would be unusual, you'll usually discover plasterboard behind a shower like that

    You may well have dried sealant on top of the tile. Most porcelain sealers are impregnating sealers - they are supposed to soak in, and you then wipe the excess off. If you left it overnight before buffing it may well have dried on the face. You should be able to get a remover, and then seal...

    just a word of warning on your plan - the green T&G isn't suitable. nothing sticks to it as the green stuff is actually a wax like coating. Using 6mm no more ply\hardie over the top is the recommended way. no more ply specify using a grab adhesive and screws to fix it.
