ok, I believe thats a wireless thermostat, could be someone else nearby has a wireless thermostat that is controlling your boiler in which case you will have to alter the frequency, (see manual) Or diverter stuck/micro switch faulty.

Also the outlet on bath taps are larger 22mm so the flow will be greater, turn the tap down a bit this may help.

Does seem strange you run the gas pipe yourself but unwilling to tighten a nipple which would have saved alot of hassle. Its almost like creating a drama.
