Just done this recently for a upstairs bay window, I used 60mm celotex, pushed right in leaving no air gap, I then foamed the edges and the taped over them with foil tape, I will be also going over it all with 38mm insulated plasterboard.
I've recently vented mine using the Grey pipe insulation, its extremely cheap to buy i just cut it to rounghly foot long strips and pushed it between the felt laps, it's worked a treat and fits alot tighter than when I tried with batons.

Yes celotex foamed and taped in-between the rafters, I just wondered seeing as though the insulated pb has an inbuilt VCL there would be a way to maintain in down the joints when butted together.
