The odour you smell from natural gas is man-made and added (mercaptin is one element). It is done so, in a carefully measured volume so that it is detectable by most human noses. If there is a leak but no smell then it is deemed safe as the leak is either too small to be of significance...

A permissable drop can soon become un-permissable. I think TTs should be done at every opportunity and any leaks detected and repaired. But that's just my opinion.

Your diagram shows a wall hung pan. You don't need to. Floor standing back to wall.
