How about simply using a Dremel to just drill out the old grout and replace. Never done it myself but sounds easy enough.

Thanks for that gcol. I'm now ready to put the skim coat on but have left the undercoat to almost dry. Is it ok just to put the finishing plaster straight on and will it bond ok. I could put a coat of pva on but am concerned that I would lock in the remaining moisture in the undercoat.
