You don't need to plaster but it gives a better finish. You can simply dry line which involves using tappered edge plaster board and skiming/sanding the joints. This is largely what they do in America I learnt recently. Then prime and paint directly on the plasterboard

I had a similar issue when I got my B & Q sink. I guessed the holes were large to allow for adjustment. Trouble was they were larger than the biggest washer B & Q sold! They had a repair washer which was bigger but the centre hole was too small to get the coach bolt through.
