    Whats teh best way of making these corners not rounded, but nice and smooth (billiard ball smooth), so that you can hardly feel any grain? I plan to fix the sides together with dowels and glue, would this be ok? The wood is solid english oak.

    Do not dip the shutters. Dipping dries out the wood, destroys any glue, and generally makes a bit of a mess. If its paint, remove it with a heat gun and scraper.

    Why don't you get a long piece of 2x4 (say 10 feet), screw it across several joists (above them, not below!), and screw your coach bolts into that? Spread the load so to speak.
