Or try placing a screw driver on the screw that is halfway out and giving the screw driver a tap. It should force out the captive nut on the other side allowing you to grasp the sleeve and finish unscrewing.

I think finding a local locksmith is probably your best bet. Should be less than £ 100 to include a quality british standard five lever replacement lock.
As you hint that your DIY skills are perhaps not great I can see you spending over that amount in tools, parts, time and effort.

It is interesting that there appears to be little damage to the door its self. I would have expected to see marks on the door where a screwdriver or similar tool had been inserted to lever off the handle.

It would depend on the keyway and type of cylinders that you wist to use. ie if your old night latch were using a standard 5 pin yale keyway and your euro cylinder was using the same 5 pin keyway they could work under the same key.

Best guess is that you are looking at a push on plate. Small flat screwdriver at the bottom and see if it will lever off. Plate comes off to reveal fittings.

I have never seen a single euro thumb turn and a quick look through various catalogues tell me it is an unusual request probably because you would have to deal with blocking of the exterior hole. Why not a double euro with thump turn?.
No outside hole to block and easy open from the inside...
