A new hw thermister seemed to sort out my boiler with the same problem. (different make of boiler though but still a combi)Try running the shower at a slower rate with the temp on the boiler a bit lower. I found this helped it to not cut out as much untill i could get it fixed.

What would i need to be able to heat a tank of water with my current combi? Would it heat the tank water to a higher temp than what im getting now from the taps?

I had my divertor valve replaced not long ago on my Sime friendly combi and i was only charged £100 including parts and labour. It sorted out where the hot water should go to but mine still has other problems with hot water. Its a Sime so expect more problems to come your way.
