The middle base oulet will be for the flexible pull out hose so you can have either hot or cold water coming from it, depending what tap you turn on. That is all I know about these fittings, hope it helped.

This could have been solved without even touching the wires. Why did'nt you just leave the wires as they were and turn the switch 180 degree's and replace.

You will have a nightmare using expanding foam and I'd guarantee most of it would spill out, down the skirting and onto your new floor. Use pine decorators gault to fill in the gap at the top and so long as you've used no more nails to secure then I'd be unconcerned about the gap at the bottom...
