theres no problem there as you have a cavity, all I would do is lap the polythene up the the side of your house ,tak on the brickwork with some roof batten and then cut of flush with top of concrete once it has set ,job done
that is a painful video to watch , and as you rightly say any customer seeing you "play " with one of those things will not be filled with much confidence !!!!
agreed screeding is one of those jobs that looks easy , it is not , you only get one chance to get it right , I would use a proper screeder who will have it delivered anyway .

I have done a couple of these in the past , you can build up brick piers and stick a steel on top , at joist level , you will need to check your footings depth though
