    Chimney problems.

Just re-point or render the stack in the loft space; replacing any spalled bricks. Check above roof also as this is probably in poor condition.

I think it is more to do with 'air leakage' rather than 'draught' (not draft  )

removing a crumbling arch from a brick fireplace

Use a prestressed concrete lintel. Nothing is going to fall down as you can see the arch has dropped already therefore not holding anything up; it doesn't look original either.

removing ceiling, bit concerned about black dust and cleanup

Probably not existing boards though - just plaster on laths, which has come away from laths hence sagging. A board screwed up into joists will pull it back into position.

    garden fence

There are usually local planning laws that prevent the erection of fences that are too high; the limit is usually 2 metres. Plant some leylandii's instead and let them grow to 15ft!

Should I build the roof or the walls first?

Walls support roof. You want roof, you gotta have support for it. So yes you can construct the corrugated roof that you are planning as long as it is adequately supported. It doesn't really make a difference how old it is - the fundamentals of building from the ground up still apply. Also if...

    bare brik wall in kitchen

Nothing that will do any harm is going to settle or soak in to the brick while you are cooking (unless you run a take away service?). If you are that paranoid then screw a piece of plasterboard as a splash back behind the cooker to catch any 'spits'. Don't emulsion the bare brick walls, it wont...

    Wall/floor 'coving'/junction?

You generally dress a floor covering up the wall to form a skirting. I would think anything made from mortar would just break up. How about a sealing in a bead of upvc quadrant or similar? Is that what you mean??

    Condensation?

Even though there is a piece of furniture in front of it and it stops just above that piece of furniture? Third photo down doesn't look like enough damage to be a leak - just mould on surface, no blistering or bubbling of paint and the decorative paper border is even still in tact. Worth...

installing a lintel into fireplace help

Just put studs / noggins where the tv bracket screw holes will be. As for taking the existing lintel out I don't see why you need to? Just cut out and put new lintel between cheeks of breast and build up off of that to meet existing arch, cut bricks and fill with mortar as required.

installing a lintel into fireplace help

If you are in fact reducing the opening then why don't you just stud it out and plasterboard it up? A lot easier / cheaper / quicker.....
