If you're getting it from Jewson the minimum order is 4 panels according to that link. It's also overpriced. The only way you're going to get 2 panels to look good is to trim 6" from each side of both imo.

Pressure treated wood is the way to go and yes, if freshly treated it will be wet (and heavy). Just build the fence and give it a few weeks to dry out before painting. You could even leave the panting until next year. It will be fine in the meantime.
