If you are plasterboarding your guess for plaster is a bit on the thick side I'd say - more like 2-4mm. Why not build a stud wall?

Houses of that era were built with underfloor vents from day one to avoid damp problems. The OP may have a new airbrick but its probably in the spot of an existing vent.

You could try digging around in the ceiling there could well be a junction box up there with an earth in it, had to do this recently, ended up cutting a bit of the ceiling away to gain access to the JB but it was covered by the new light fitting.

If the horizontal run of the cable is behind cabinets and/or under the worktop could you not save effort and run it on the surface?

Not an expert but from what I understand of houses of that sort of age you'll just have earth below your ground floor, and those vents are supposed to ensure the area underneath the floorboards stays nice and dry and not for venting air into the room. Sounds like yours may be one row of bricks...
