Adding cement to plaster

I have seen plasterers adding a little cement to gypsum plasters such as 'multi finish', I can't remember the reason why they do this; Is it to speed up setting time or so they can put it on thicker ?

Better off to use dirty water, then you are not interfering with the material properties.

Most times I have seen it used is for sticking beads when someone is in a rush.
