Another coving question.

I have some 127mm plaster coving to put up and i understand the point of pining below it to stop it falling and i am using plaster adhesive.
My question is that if i offer up the coving to the wall first the two flats on the inside of the coving are not 90 degrees to each other so should i put the flat aginst the wall or the ceiling?
I hope i have explained this well enough.
