Chimney Pots and Cowls

I might be inclined to keep the ornate pots in my garden (or sell them ) and buy modern plain replacements for the roof.

The house is quite a nice Edwardian detached, with many original features. I couldn't bring myself to get rid of them. I think what might happen is they reinstate two original pots for the working flues, then install two appropriate venting cowls for the empty flues.

OP,
Ref what you wrongly call "speculative commentary" etc. - I'm afraid you didn't understand what you were being advised of so I stopped advising you. But given that you are "happy to be schooled":

I knew that those bricks had drip grooves & that water dripping down from the grooves was landing on the lower ledge, hence the fillet.
Flaunching provides best protection by projecting 25mm from the face of the stack.
How do you know that the mix was 3:1? How do you know that the flaunching has been correctly applied?
Perhaps you missed my mentioning water entering the stack ie. the inside of the original flue brickwork?

If you are so keen on Edwardian features then why did you remove the traditional Crown pots? And even now you intend to install two wire cages instead of two pots?
