Coatings for various kitchen and garden items?

I've quite a few things to coat and I'm not sure what's best to coat them for durable, easy-maintained protection (mostly from fluids) while giving a nice finish.

Knife handles eg Nest , Opinel
Chopping board (is pure Tung oil OK?
Long handled gardening tools: spades, rakes, forks etc (possibly ash)
Short handled gardening tools: trowels, forks etc
DIY Tools
Broom handles
Small brush handles
Kitchen utensils & utensil handles
Garden bench (previously coated with water based stain)

I sometimes forget to take gardening tools in if the rain comes on quickly
Any recommendations please?

I can leave all items for weeks if a coating that needs curing is best, I have spares.
