Am about to lay 100mm thick rolls of insulation in my loft but have noticed that the distance between the joists varies a great deal (9" >>> 12").

I was wondering if I buy insulation such as Space Blanket will I be able to trim its width to fit in between the joists? I notice that a bread knife is the preferred choice to cut the lengths but will cutting the widths be a nitemare?

Thanks in advance

As space blanket is an encapsulated product, I would personally try and squeeze it in.

If you have to cut it, you could cut the length first, then roll it up again to cut the width.
