The problem is you are heating an up insulated floor slab.

Although wet underfloor heating only adds a small load to a gas boiler, so maybe it doesn’t matter too much.

Digging up the existing floor will mean going down about 350mm to accommodate hardcore, slab, insulation, screed….but might be worth to achieve aa new kitchen area with a proper insulated floor and underfloor heating.
