As it is going to be a DIY build then using a safe ELV supply on bits in and around the shower area is going to reduce any hazards of electric shock to almost zero.
In theory....in practice, where would you install it? You need a single core from your shower twin and earth through the coil. You need to put that thing in an enclosure, and you need to hope it doesn't catch fire....
Put a flow switch in the water supply to the shower in the roof space, would be my suggestion.
If you're a more competent electrician than plumber then you could try it!
Note that it seems to require a 24 V DC power supply. IIRC, the ones that I linked to didn't; they were also more enclosed. You might also be able to find ones where the clamp can be opened, avoiding the need to thread the conductor through it - though you'll still need to separate the live and neutral conductors.
