Fitting mew UPVC windows?

I was reading the info from a supply only window frame firm and they recommended NOT to use expanding foam.

Since most of those I see that have been "professionally fitted" seem to have used that foam then what is the general attitude towards it?

Yes use it! It is thermal and sound insulation plus nothing holds a window in place like foam (I do use bolts too).

You just need to be careful of staining the face edges and distorting the frames. Get a proper foam gun for about £25 and stay away from the diy disposable cans.

With vertical sliders it best to but shims or backers between the sash's and the frames to prevent the foam from squeezing the frames out of shape while it sets.
 
Screw and foam all the way......

As Gazman says don't use the normal cans , you have no control over them, a proper ' foam gun ' you can alter the speed it comes out
