Heater not working

This is my first time writing in forum, so bear with me...

My car is 1995 Ford Escort.
Last week, my car started having smoke coming out of hood and my heater stopped working, my husband discovered leak in gasket something. He replaced it. He believed that it would fix the heater problem but no... it did stop the smoke coming out of my hood. However with the heater. The fan still works, it's blowing cold air. It just wont blow hot air. Why?
Also, I noticed the themostat of Cold to Hot is now a bit wonky. Whenever I press on gas pedal, the gauge would indicate that engine is HOT. If I stop the car or slows down, it would go down to between Hot and Cold. Any idea why it's doing that?
