I filled some gaps in with some gypsum plaster adhesive (used for dot and dab) I had lying around

Edit: deepest fill approx 60mm

How long would I have to wait for it to dry before wallpapering to ensure it doesn’t peel off?

Cheers

Give it a day or so. You will soon see that it is dry...

That dot and dab adhesive can take a while in deep fills.
So depends how deep and wide and what's the drying conditions are like so no specific answer. I avoid using because of this.
Maybe 10 to 14 days.
Toupret tx110 will take 2-4 days on deep fills.

You can tell if it dry but looking and felling it. Just go with what you think

I was always told 6 months before papering new plaster. But that was with browning then skimmed, not sure about the latest products.

Yes. New build with wet brickwork and concrete 6 months is recommended.
I've had areas back to brick on a Thursday and skimmed. Monday it's all dry and I'm hanging paper. No problem. Just depends.
