I am installing a single-pole dimmer. There does not appear to be a ground wire within the wall-box to connect the green ground wire to from the dimmer. On my instructions it says to connect to green ground wire to the copper wire in the wall-box. There are three copper wires in the wall-box. Can I connect the ground wire to any of the copper wires? There is not a specific GREEN ground wire within the wall-box

All the bare copper grounding conductors in the box should be connected together, and to the box itself if it's metallic. You can just pigtail the ground wire from the dimmer to these.
