Installing Cooker Extractor Fan In Chimney Breast - Balloon?

We are installing our cooker extractor into the chimney breast where our cooker is positioned. The extractor flue will come out of the side of the breast (and not to the top of the chimney stack).

Should we inflate a chimney balloon above the extractor to stop debris from falling onto the extractor? Or possibly a sheet of plasterboard? Or best to leave the chimney fully ventilated above the extractor?

Perhaps you should direct your question to the manufacturer, or any large mfr. such as Vent-Axia. If BCO is involved in your project ask them.
I have flued thro the back of a c/breast, but only when the appliance was installed in the c/breast with the front face removed to form an alcove.

Research on here "installing solid fuel stoves" to get an idea of why chimney flues are not just large cavities.

Thanks for the reply, however I can't see a manufacturer having any idea about whether a chimney breast should be blocked up or not. Or am I missing the point?

Yes. Perhaps, with respect, you should read the reply again.
