Installing new solid fuel fire - Advice Please!!!

Hi

I have just removed a gas fire and ripped out the seventies brick fireplace. The chimney breast has now had all plaster removed and is back to bare brick. I am arranging a chimney sweep to come in and do a smoke test/clean chimney. I intend to install a new cast iron fire insert, slabbed hearth and wooden mantel piece.

Can I ask

1. Should I get the chimney breast re-plastered before I install fire/hearth and mantel, if yes how long do I need to wait before installing fire?
2. Can I use plaster board on a chimney breast that will eventually have a solid fuel fire? I may try and do this myself? Likewise, should this be done before or after installing the fire?
