Generally avoid anything behind, even if the first one is ok, when it breaks the replacement probably won't. If you really have to then skirting level is the safest option.
Edit- another trick would be if the kitchen is for people taller than average then raise the units on blocks and get some space at the top or bottom of the appliance. The standard kitchen height was devised when the average user was about 5 foot something and standards never change. Did you hear the one about modern trains being the width of two horses behinds?
Appliances used to allow for service space behind but more recently, with the demand for bigger load specs - they don’t!
I’d plan for it by creating a service space - all the way up to wall cabinet base - this will make everything easier for you and still allows for standard depth worktops. If the backwalls are stud walls then you can route pipework through the studs.
