Maple Tree lopping

You know the way you see Oak Trees cut right back to just the trunk and all the major branches are all lopped, can I do the same with a Maple?

I'm aware that Maples 'bleed' so am I right in thinking it should be done after new growth in or around mid summer?

The Maples about 20 years old (i'd guess) and about 25-30 foot tall.
