Mini Disaster (Water Leak)

I am doing some work on a property I'm renovating and I turned off the water from outside. I might have not turned the stopcock fully and I cut off some pipes in the upstairs bathroom. Few days on and I have noticed that plaster board in a cupboard below has dropped off. The plaster board is a second layer false ceiling, few feet below the original ceiling (done with lath and plaster) the lath and plaster has got a bit wet, but it’s still in place. The joist next to the area also got wet. I’m talking about a bucket or two worth of water.

My question is, can I just let the lath and plaster dry normally and then just replace the plaster board above this cupboard?

Yes, but give it a couple weeks to dry and make sure no other water still in ceiling void.
