At the moment I have:
Ideal W Gas boiler
Cold water tank in attic
Potterton EP2002 Programmer (can currently control CH & HW independently)
Honeywell 2 port valve next to boiler for CH
Honeywell 2 port valve next to HW cylinder with stat upstairs in the airing cupboard
Honeywell thermostat in sitting room

I'm pretty sure this means it's an S Plan system?

Wiring currently inside the EP2002:
The wiring diagram:

I would like to incorporate the Nest 3rd Gen thermostat.

Due to the built in junction box I plan to remove the EP2002 and replace with a pattress box containing a choc block with the same connections as was in the EP2002. I'll then install the Heat Link box next to the pattress box passing the following wires to it:

Heat Link wiring diagram:

Firstly is this going to work and secondly, is this a good way of going about it?

Thank you for your time.

He's got his hot water ON connected to the Nest heating OFF, and his CH OFF to Nest hot water ON. Heating ON and hot water OFF are correct

Hi there. Just need some advise before I install the nest into my home.

To confirm
Nest 1 = CH off
Nest 3 = CH On
Nest 4 = HW Off
Nest 6 = HW On

Also if I have two wires in each terminal currently do both of them need to also share a terminal in the nest devise?
