New concrete base for a kitchen floor?

I am about start a project to fit a new kitchen but before I do I need to dig out an old floor and lay a new concrete base.

Once the floor has dried out I want to put some 150w underfloor heating matts down underneath a tiled surface.

A few of questions I am struggling to get answers to and hope somebody can help?

Can anybody advise what the average drying /curing time is for a concrete floor suitable for this finish?

Would a dehumidifier help or hinder the curing process and integrity of the concrete base?

I have to work to an existing floor level. So based on a 6mm insulation under the heating matts, the heating matts & leveling compound, tile adhesive and 20mm tile. What depth I need to leave between the concrete finish level and the finished level?

Any help, advise or suggestions very gratefully received as I can't sort anything else out with regards to fitting the kitchen, second electric fix and decorating until I can figure this out.

Yes. Many people can and have in fact done so in the past . If you do a search here and in the Building forum you will find them. Please note you didn't say here what depth you want.
