I have new external composite doors going in next week and would like to apply a clear protector onto the bottom to stop the dog scratching them when he is looking back into the house what would you guys recommend please?

You would need a steel plate to prevent scratching , no paint on coating will prevent dog damage.
You could try 3M helicopter tape
