Noise cancelling headphones - do they work?

I always use the ones UAL provide on their flights, don't know how much they cost the airline, but doubt they would be over £50.
They're excellent at limiting the constant humming noise from the engines and make long flights a much more relaxing experience.
If you're sitting in a cabin full of screaming babies, they won't make a difference though...
