Packing up joists

What would you use to pack up joists to get them level? I’ve heard slates are good - is that still correct.

It is ok for the first floor the joists to just sit in the block work and cut off in the cavity isn’t it? That’s what my joiner has done but just checking. They don’t need treating or putting into and dpc do they?
