Plaster or board in bathroom project

Hi
I will have to remove tiles from a wall which will leave a real mess, I was thinking of going further and taking it back to brick then putting on board with a skim.
This is a 1900 property on an outside wall.
Is it acceptable to use board with a narrow space behind to create an extra cavity as condensation due to the cold wall is often a problem?

A vapour barrier with insulated boards would be even better.
