I want to fit thermostatic radiator valves to my oldish CH system (1/2 inch copper pipes). Will valves with a 15mm brass olive seal okay?

Probably. 1/2" is slightly bigger than 15mm. The olives will fit, but sometimes the body of a fitting is too tight. I suggest you pick a manufacturer and give them a call.
NB if your system is that old it may be a single-pipe system, where all the rads are in series. If it is, you need special trv's.
