Do I lay my eight foot plywood sheets so that two edges always meet on top of a joist ? This is my preference even though it involves more measuring and cutting and waste.

Alternatively, ....

should plywood sheets meet "in thin air" in the gap between the two nearest joists. This will involve endless noggin nonsense so I don't like this approach much.

What's the best method .

Based on what I've found around the web on this topic, I'm going to attempt a reply to my own post.

The long dimension of the plywood sheets should be perpendicular to the floor joists. All plywood end joints should be centered on a joist. Joints should be staggered. Leave a 1/8" or 2mm gap around the edges of each plywood sheet. As you take up the floorboards, mark the joist locations ( for example in pencil on the skirting ). In this way you can be sure that your screws are going into the joists, not thin air.

Any comments ?
