I currently have a stopcock valve for mains water inlet. It works but I obviously have no insight into how much the pressure is and that's a lit of an issue, since I have to deal with on/off water hammer issues, and pipe wear. are there any devices that can be used to set a specific water pressure for incoming mains ?

You can get pressure reducing valves, but that might not be your issue.

It was caused by loose pipes and I fixed all those issues, one tap was also not working properly, and replacing the cartridge fixed the banging on that pipe too. , However, on occassions still get thuds (not banging) if I open the mains stopcock too much.
