How do you remove rendering from a building without damaging the brickd underneath?

I have seen some cowboys @ work using high powered Jet Wash machines and they totally changed the look of the brickwork by adding lots of sharp holes and uneven surfaces.

You can't. In many cases the bricks have been scored with a scutching hammer anyway.
