Replacing door frames

Hi I have removed a couple of door frames to be replaced as it was badly out of square. The stud wall at the head of the door is still out and at its lowest point only measures 77" 3/4. I am also wanting to put a door on the space under the stairs and that is shorter at 75".

My question is what is the best way to get frames and doors to fit as the doors I have seen come as standard at 78" alone?

Raise the head on stud wall to accomodate a full size door and frame, you will have to cut down a standard door for under the stairs, need a suitable style of solid door to be shortened that much.Or make a door [mdf is one option].
